Dining on the Rocks - New Asian Menu

Dining on the Rocks is the signature restaurant of Six Senses Hideaway Samui, part of a world-renowned group that prides itself on "getting back to nature".

Each dish is prepared with four things in mind: flavour combinations; textures; aromas; and finally temperature combinations.

One way tasting all of it is by ordering the ‘Experiences’ set dinner. This provides you with 10 mini-courses, giving you a chance to try as many dishes at one sitting. And this is what you get: Tartar Dégustation; Reduction of Coconut and Truffle with rosemary roasted chicken; Tian of Seared Tuna with spiced lentils and balsamic; Roasted Duck with citrus and an orange-lavender granite; Iced Tom-yam Gazpacho with oysters; Steamed Hor-mok Soufflé; Iced Coconut and Blue Curacao; Lamb Cutlet filled with spiced potatoes served with raita and mint; Jasmine Tea-flavoured Chocolate Pots with spiced pineapple; and Organic Lemongrass Tea.

Of course you can order from the à la carte menu which is also presented in a unique way. All dishes are available as starters or main courses. And complementary dishes are listed beneath your favourite wine, meaning you don’t have to keep switching bottles throughout the meal if you’d prefer not to. With over 1,000 different bottles in the wine cellar, even the fussiest of tipplers will be satisfied.

Muda - Royal Thai Menu

Every night at Muda, a large cast of resident musicians and dancers perform a different set every night from 8:15 pm almost continuously through to 10:00 pm. And everything is authentic with the performances. Right down to the original costumes, which have to be sewn onto the dancers every night, in keeping with tradition.

The owner, M.L. Archava Varavana is a member of the Thai royal family and he's brought the performers down to Samui, directly from the Grand Palace. And he's also brought down the royal household's private Royal Thai cuisine recipes that are used at Muda Restaurant, and has personally created five French cuisine dishes that are also available here (M.L. Archava lived in Paris for 27 years). And these special dishes include: an exceptional Butter Fish in white wine sauce; Buyabes; a Lobster, also in a white wine sauce with mayonnaise; and Fried Frog with butter.

The Thai menu has many exciting dishes, too, and the following are personally recommended: Phoo Jaa - crab meat with mixer fried in a crab shell; Beef Mussaman Curry; Fish in thick yellow curry sauce; and Seafood with Thai chili paste.

A night's dining at Muda Restaurant is a special experience. And you won't find another restaurant on Samui that serves authentic Royal Thai Cuisine that's been created by a member of the Thai Royal Family.

Poppies - Thai / International Menu

Choose between sitting in the elegant, 40-seater open-sided restaurant itself with its ornate Thai-style roof, or outside on the beach terrace under the stars where there’s room for 30 more. There’s also seating around the pool and in the Ayuthaya-style teak pavilion too.

Over the years, Poppies has had a procession of top-drawer international chefs. And the latest in this line is Gregorio Montanez. His long experience spans several continents and two decades. Which, perhaps, helps to explain why his dishes are so sublime.

Both the Soft-shell Crab with a green mango salad and chili spring roll, and his Goat’s Cheese baked in a filo pastry and served with a dry fig compote are superb starters. And his main courses are equally delicious. The Pan-roasted Duck Breast with plum, orange and crispy garlic sauce served with baby argula and feta cheese salad; and the Roasted Half-chicken marinated in coriander, garlic, oyster sauce, yellow curry powder and turmeric with mashed potatoes

And the Thai cuisine also boasts a master chef. This time it’s Khun Wantanee Panplum. She’s been at Poppies since day one and this is real Thai cooking. Try her Tom Kha Talay – mixed seafood soup served in a coconut shell, or the Pla Neung – whole white snapper steamed with Thai herbs, ginger, onions and soy sauce.

Prego Italian Restaurant - Italian / Thai and International Menu

Prego is open on 3 of its 4 sides, giving it a cool, airy feel. And this ‘al fresco’ atmosphere is accentuated by the spacious lay-out and subtle lighting of the tables and lounge area. There’s even a completely open terrace at the entrance surrounded by one of the restaurant’s numerous water features, in this case a pond that runs the entire length of its frontage.

The restaurants center piece is a wood-fired pizza-oven. Naturally you will get some very good pizzas at Prego but you can also get dishes such as Focaccia con Bresaola e Rucola – pizza bread with beef bresaola and arugola salad; Risotto con Gamberi e asparagi profumato al rosemarino – risotto with prawns and asparagus with a hint of rosemary; Fettuccine con Aragosta ed Erbette – egg fettuccine with Phuket lobster, tomato and fresh herbs; Medaglione di Branzino Padellato servito con caponata di verdure – pan-fried snow fish medallion with a vegetable caponata.

Tamarind - International / Asian Menu

Here are some of the chef’s recommended starters: Oriental-spiced Pork Tenderloin, turtle-eyed bean salad with blueberry oil; Parcel of Swimmer-crab, charred string beans and roasted tomato pesto; and Grilled Duck with okra salad between filo crisp, tangerine and balsamic syrup. And the Cappuccino of Freshwater Prawn Bisque is another superb appetizer.

A popular main course is the Tamarind Seafood Basket for Two, which comprises Thai spicy and sour seafood soup followed by a selection of grilled rock lobster, swimmer crabs, freshwater prawns, New Zealand green-lipped mussels, battered calamari rings, snapper satays, with a garden salad and your choice of potatoes or rice. And at only 1,600 Baht, including 2 glasses of wine it’s incredibly reasonable!

Other recommended main courses include: Tajines of Norwegian Salmon, olive-pear confit Udon noodles and sweet bell-pepper coulis; Grilled Tournedos of Beef Tenderloin, spring rolls of cultivated mushroom and creoled hand-cut potato; and Oven-baked free-range Chicken-breast enclosing green pandanus leaves mousseline with sweet chili and pistachio sauce.

The Page - Thai / International Menu

Located in the minimalist "Library" resort. The Page specialises in both Thai and international cuisine, with separate menus for breakfast, lunch and dinner. And, although small, they contain a wide selection of various dishes to suit all tastes.

The Yellow-fin Tuna Tartare is a recommendable international starter, whilst the Thod Man Kung (prawn cake) is its Thai counterpart. Main course dishes include a stunning Blackened Lamb Cutlet with grilled peppers and sweet potato mash, and a Salmon Steak in Pesto Sauce, which just melts in your mouth, that’s served with roast potato and grilled vegetables. And as for the Thai dishes, well the Tom Kha Gai (chicken coconut cream soup) is one of the very best you’ll find on Samui, and the Sautéed Crabmeat with Curry would be hard to beat.

This restaurant has a laid back atmosphere and has jazz and blues entertainment regularly. The restaurant is open every day from 3pm - 11pm.

Selections from the starter menu include the shack ribs, steak tartar, seared Alaskan sea scallops mixed meat kebab and much more.
